So for dark souls 3 there’s a two step verification: one that you at the back of the opponent and another that the opponent is still there, if they roll out in time you get the pseudo backstab. Exit the menu, and now you can cycle through your equipped weapons by pressing left on the d0pad for left hand, and right for right hand. Down is for swapping items (which you press square to use), and up is for swapping through spells, which you need to attune (attune means equip) at a bonfire.
